Horse meat is everywhere! Whether we want it, know it or not. With all the mass hysteria of unwilling horse meat contaminating and in some cases completely replacing the meats we thought were buying, Oliver Peyton’s decided to take the bull by the horns. Or rather the horse by its manes.

So when Billy Franks as asked to supply an unusual and bespoke jerky for the diners at The Nation Cafe, we were very excited to agree. I always love making new recipes and trying new jerky’s in the test kitchen and during this Horse gate time we are living in had thought of trying this already. I sourced some horse meat and began creating nearly 100 of these unique ‘Bag of Nag’ jerky treats.

The main menu on the night, created by Gillan Kingstree (Head Chef at The National Dining Rooms), was ALL horse starting with a course of Horse Tartare, hay smoked duck yolk, radish and soda bread crumble. Then a delicious main of Roast horse Sirloin and vegetables was like the best Sunday beef dinner I’ve had in a long time. The final treat of the night was technical not horse, but carrot cake and was very nice indeed.

All in all our horse jerky seemed to go down a treat and Oliver, Gillan and the customers all seemed to like it.
